Who’s ready for a classic Italian dish in sandwich form? I love eating Chicken Parmesan, and I’m turning it into a sandwich tonight. You’ve got all your classic elements of chicken parm plus toasty bread, garlic aioli, lettuce, tomato and extra sauce on top of the chicken. You will love the crunch and all the saucy flavors in this dish. Chicken Parmesan was a dish I grew up eating regularly, and there's nothing better than reliving your childhood nostalgia.

Chicken Parmesan Sandwich Ingredients
8 slices gf bread toasted
Salt to taste
Pepper to taste
Olive oil for frying
4 chicken breasts thin
1 c cornstarch
2 eggs beaten
Dash of hot sauce
1 t paprika
1/2 t garlic powder
1/2 t onion powder
1.5 c gf bread crumbs
GF red sauce
Mozzarella cheese shredded
Parmesan cheese shredded
Basil garnish
Oregano garnish
Lettuce for serving
1 tomato sliced
Garlic aioli for serving
Directions
Preheat oven to 400 degrees.
Combine cornstarch, paprika, onion powder, garlic powder, salt and pepper in a bowl.
Combine eggs and hot sauce in a second bowl.
Place bread crumbs in a third bowl.
Season chicken with salt and pepper on both sides and dip in cornstarch, egg and bread crumbs. Repeat until all chicken is breaded.
Heat oil in frying pan over medium heat and cook 2-3 mins per side until golden brown.
Transfer to a cookie sheet and top with sauce and both cheeses. Bake for 15 mins until cheese is melted.
Spread garlic aioli on half the bread and top with lettuce and tomato.
Sprinkle basil and oregano on chicken and top with a spoonful of sauce.
Put sandwich together and serve.
