Crispy salmon patties served over a bed of rice
Who’s ready for a salmon supper? I’m making Salmon Cakes with Fried Rice. These salmon cakes are perfect when you want to chop up your salmon, and they’re served over a bed of a simple vegetable fried rice. I love eating salmon, as it packs tons of vitamins and nutrients; plus there are so many ways to utilize it. These salmon cakes come together in a short amount of time, and it's easy to make them too. If you're looking for a healthier meal, and you do not want a whole filet of fish these salmon patties are for you.

Serves 4
Salmon Cakes Ingredients
2 lbs salmon puréed
2 eggs
1 T dill
Salt to taste
Pepper to taste
1/2 c GF bread crumbs
1/2 onion puréed
1 T paprika
1 T garlic minced
1/4 c milk
3 T lemon juice
2 T parsley
Fried rice for serving
Oil for cooking
Directions
Combine all ingredients in a large bowl and mix well.
Form into 8-10 patties and let rest 20 mins.
Heat oil in large skillet over medium high heat. Add salmon patties and cook for 3-4 mins per side until golden brown and crispy on the outside.
Repeat until all patties are cooked.
Spoon fried rice onto plate top with salmon cakes. Serve.
