Classic Thai noodle dish with shrimp, sauce, and peanuts
What’s your favorite Thai dish? I love Pad Thai and today I’ve got Shrimp Pad Thai. Succulent shrimp in a peanut sauce with noodles, fresh herbs, peanuts, and lime to top it off. I’ve always loved Thai takeout and this is by far one of my go tos. When I got diagnosed with celiac, I wanted to still be able to enjoy one of my favorite takeout dishes. There’s nothing more comforting than a big plate of noodles. Try this Pad Thai today for a fun take on the classic Asian takeout dish.

Serves 4
Ingredients
16 oz gf rice noodles cooked
1.5 lbs shrimp peeled and deveined
Salt to taste
Pepper to taste
4 eggs cooked and scrambled
Lime juice garnish
1/2 c peanuts crushed
8 oz bean sprouts garnish
3 T sesame oil
3 T fish sauce
3 T sugar
1.5 T garlic minced
1 bunch scallions chopped
3 T rice vinegar
1/4 c cilantro fresh
3 T GF soy sauce
1/3 c brown sugar
3 T peanut butter
2 t crushed red pepper optional
Directions
1. Heat sesame oil in large skillet over medium high heat.
2. Add shrimp and season with salt and pepper cooking 3-4 mins.
3. Combine fish sauce, sugar, brown sugar, soy sauce, vinegar, garlic, peanut butter and crushed red for sauce.
4. Once shrimp is cooked, reduce heat to medium low and add noodles, sauce, egg and bean sprouts stirring 2 mins.
5. Remove from heat and fold in cilantro and scallions.
6. Garnish with peanuts and lime juice.
