All the flavors of sushi served with rice crackers for dipping

Heading back to NYC to recreate this Nami Nori appetizer of Spicy Tuna Dip served with rice crackers. NYC dining last year was all about the appetizers, and I was super impressed. The spicy tuna dip had a nice kick of heat to it, while the rice crackers were super crunchy. This is an easy dish to make, and it only requires a few ingredients. Serve it up as an appetizer or turn it into an entree for one or two.
When I first heard that New York City had a 100% gluten free sushi restaurant, and I could eat everything on the menu; I was in heaven. Side note: making rice crackers is easy and fun. I kept snacking on them, while mixing together the dip.

Cook Time: 10 minutes
Serves 4-6
Ingredients for Spicy Tuna Dip
Rice Paper wrappers, fried
1.25 lbs ahi tuna diced
1/2 c mayo
1/4 c sriracha
1 Serrano pepper sliced thin
1/2 Asian pear diced
1 bunch scallions chopped
1 T sesame oil
Directions
Combine tuna, scallions, and pear in a bowl.
Mix mayo and sriracha together.
Add to tuna along with sesame oil. Mix well and place in serving dish.
Top with Serrano pepper and serve with rice crackers.
