Salmon, bacon, lettuce, tomato all on a toasty bun
I wish I lived closer to the ocean, so I could eat more fish or seafood throughout the week…once or twice a week will have to do though. Having lived in Chicago, Dallas, Milwaukee, and Paris; I have fish or seafood but I'm not right on the water like Seattle, Miami, or Barcelona. The fish dish featured here is my Salmon BLT. It starts with a toasted GF bun, honey mustard spread on both buns, topped with pan seared salmon, crispy bacon, lettuce and tomato. Turning a classic sandwich into a high end fish sandwich you would find on the water. I’ve had this before in Florida and even at seafood restaurants in Dallas, and it’s one I go back to every time. Go right in for a big bite and you will be in salmon heaven!

Cook Time: 10 mins
Makes 4 sandwiches
Ingredients
4 GF Buns toasted
4 salmon fillets 4-6 oz per piece
Lemon juice
Salt to taste
Pepper to taste
8 slices GF bacon cooked
2 tomato sliced
4 lettuce leaves
1/2 c honey mustard
2 T olive oil
Directions
1. Pour lemon juice into bowl and marinate fish 10-15 mins. Remove and season with salt and pepper.
2. Heat oil in skillet over medium. Add fish and cook 3-4 mins per side.
3. Spread 1 T honey mustard on each half of bun. Top bottom bun with salmon and top bun with lettuce, tomato and bacon.
4. Put sandwich together
