Sushi grade ahi tuna with a sweet mango salsa, white rice topped with peanuts and soy sauce plus tender asparagus

I love sushi and Mango, so this Seared Tuna with Mango Salsa, Rice and Asparagus was the perfect healthy, fulfilling meal. The tuna is seared sushi style and topped with a traditional mango salsa of mango, red onion and jalapeño. I then whipped up a pot of rice and drizzled soy sauce and crushed peanuts over the top. Then, the asparagus is really simple; throw it in the steamer and let it steam to your desired tenderness. This dish gives me Asian/Hawaiian vibes, and makes me want to travel to that part of the world. I've been to Hawaii when I was little, and went to Singapore right before Covid (Tokyo Narita Airport too, if you count a 2 hour layover lol). Grab a fork or chopsticks cause it is time to eat!

Ingredients
4 tuna steaks
Salt to taste
Pepper to taste
2 T olive oil
1 large mango, peeled, cored and diced
1/3 red onion diced
2 jalapeño diced
1.5 c white rice or 3 c cooked
1/4 c peanuts crushed
GF soy sauce for drizzling
1 bunch asparagus trimmed and steamed
Directions
1. Combine mango, red onion and jalapeño in a bowl.
2. Heat oil in skillet over medium heat. Season tuna with salt and pepper on both sides. Sear fish for 1-2 mins per side.
3. Plate fish and top with a spoonful of mango salsa. Serve with rice and asparagus.
4. Top rice with soy sauce and peanuts.
