Crispy, juicy fried chicken 100% gluten free
Fried Chicken: you can’t beat this southern comfort food. One of the foods I miss the most being Celiac is Fried Chicken. I remember the days of eating KFC, Raising Cane's, Babe's Chicken in Dallas and many more. Eating Fried Chicken while on a gluten free diet is not the easiest at restaurants cause of the fryer, so it's usually made best at home...that's just what I did. The chicken was extra crispy, moist and packed tons of flavor with a little heat from the cayenne pepper in the dredge. I couldn’t get a photo in time before I ate half the skin off the one piece lol! Plus, the chicken was made in the air fryer, which made clean up a breeze and my kitchen not a mess! Whether you're gluten free or not, this Fried Chicken will have you drooling for gluten free biscuits as Big Momma would say.

Serves 4
Ingredients
4 bone in skin on chicken thighs
1 c buttermilk
2 eggs
Salt to taste
Pepper to taste
Dash of cayenne pepper
1.25 c AP GF Flour
1 T GF paprika
1/2 T garlic powder
1/2 T onion powder
Dash of hot sauce
Directions
1. Combine buttermilk, eggs and hot sauce in a bowl. Season chicken with salt and pepper on both sides. Place chicken in buttermilk for at least one hour to soak in fridge.
2. Combine flour, paprika, onion powder, garlic powder, salt, pepper and cayenne in a bowl. Dredge chicken in this.
3. Place in air fryer and cook for 30-35 mins flipping once.
4. Remove from air fryer and serve.
