Fresh, healthy lettuce wraps with ground pork, fresh veggies and a little drizzle of sauce on top
Here we have Pork Lettuce Wraps. My lettuce wraps are topped with a ground pork mixture, carrots, bean sprouts, a sprinkle of peanuts and drizzled with a sweet sauce over the top. Perfect for a well balanced meal and something you would find on a Chinese or Thai menu. They remind me of the ones from PF Chang's I would eat growing up or when I would go out for sushi at Screaming Tuna. Light, healthy and packed with so much flavor in every bite! You will be wanting these in your meal plan every week; plus you can change the protein or veggies to accommodate for the flavors you're craving.

Makes 8-10 lettuce wraps
Ingredients
1 bunch leafy green lettuce such as romaine
1 lb ground pork
2 carrots julienned
4 oz bean sprouts
1/4 c peanuts Crushed
Salt to taste
Pepper to taste
2 T sesame oil
1 T garlic minced
1/2 T ginger ground
4 scallions chopped
1/2 onion chopped
1/4 c GF teriyaki
1/8 c rice vinegar
3 T Sugar
1/4 c GF soy sauce
2 T lime juice
2 T GF hoisin sauce
Directions
1. Combine teriyaki, rice vinegar, soy sauce, sugar, lime juice and hoisin in a bowl. Set aside.
2. Heat oil in skillet over medium. Add pork and onion, sauté 8-10 mins.
3. Stir in ginger, garlic, scallions and salt and pepper for 1 min. Remove from heat and let cool.
4. Scoop a spoonful of pork mixture into lettuce cup. Top with carrot, bean sprouts, and peanuts. Drizzle with sauce over the top.
