Soup with all the flavors of a loaded baked potato
It’s soup season and almost fall, so what better way to celebrate than a big bowl of Loaded Baked Potato Soup. Creamy soup with loads of potatoes and veggies, topped with bacon, cheese, and scallions. Sour cream if you want too. This gives you the vibes of eating a big baked potato at a steakhouse and is perfect for the cooler weather. I want to keep going back for another spoonful and lick the bowl clean.

Cook Time: 30 minutes
Serves 6
Ingredients
4 potatoes peeled and cubed
1 onion chopped
4 celery stalks chopped
Salt to taste
Pepper to taste
4 T butter
6 c milk
4 T cornstarch
Dash nutmeg
2 carrots diced
4 bay leaves
2 T oil
1 t thyme
2 c heavy cream
3 T lemon juice
1 T GF paprika
1 T sage
1 T parsley
1 bunch Scallions garnish
Sour cream optional garnish
Cheddar cheese shredded garnish
1 pkg bacon cooked and chopped
Directions
1. Heat oil in stockpot over medium. Sauté veggies for 5 mins with garlic.
2. Stir in potato, all spices, milk and cream. Bring to a boil and season with salt and pepper.
3. Reduce to simmer and cook covered for 25 mins.
4. Ladle into bowls and top with bacon, cheese, scallion and sour cream.
